1. Rich of Antioxidant
Free radical and reactive oxygen species are wellknown as inducers of cellular and tissue pathogenesiswhich is causing some diseases like diabetes, cancer,inflammatory and also cardiovascular. Free radicalreactions take place in the human body and foodsystems can causing injury and death [1]. Free radicalsare one of the main factors which is necessary to causeDNA mutation, which is involve in the initiation stage ofcarcinogenesis [2]. Reactive Oxygen Species (ROS) areconstantly produced in human body by normal metabolicsystem. An over-production of reactive oxygen can occurthe imbalance of defense system. Therefore,investigations of antioxidants are needed which focusedon natural compounds from natural sources. The most widely used synthetic antioxidants in foodare butylated hydroxytoluene (BHT) or butylatedhydroxyanisole (BHA). Both of them are very effective asantioxidants but their use in food products is notpopular anymore due to their instability and also due toa suspected action as promoters of carcinogenesis. Forthis reason, there is another interest in the studies ofnatural healthy (non-toxic) additives as potentialantioxidants [3]. The total antioxidant capacity valuesshould include methods applicable to both lipophilicand hydrophilic antioxidants, with regards to similarityand differences of both hydrogen atom transfer andelectron transfer mechanism [4]. Some methods havebeen used to evaluate antioxidant activities of naturalcompounds by using stable free radical DPPH andABTS [5].

Moringa is known as The Miracle Tree or magic tree because it is proven to be a natural source of nutritious medicinal nutrients. Utilization of local food ingredients that are relatively easy to obtain and have nutritional value such as Moringa oleifera leaves can be used as a functional food product and a source of antioxidants. The results showed that the sun-dried moringa extract obtained a value of 234.79 ppm while the sun-dried moringa extract + cloth cover only reached 223.12 ppm. The activities of the two drying methods are almost the same but it is slightly better to use a blower.
